The weather has been unbelievably cold and for me, that means something warm, something quick, and something close to the heart – crab and asparagus soup. We normally share this meal on special occasion since we rarely have family gathering.
Each year, when we get together for Christmas, Mom asks each one of her kids what we want to have on that day. Yeah, she tries to cook every meal on special occasion; and this soup is always listed on the menu. The fresh flavors of asparagus and crab definitely show a contrast in textures and something that can be enjoyed at anytime.
Crab and Asparagus Soup
Ingredients:
- 4 cups asparagus (combination of fresh asparagus and canned white asparagus)
- 1 tbs sesame oil
- 1 tbs chopped scallions
- 1 tsp minced ginger
- 4 cups chicken broth
- 1/2 lb crabmeat, flaked
- 2-3 tbs light soy sauce
- 1/4 tsp white pepper
- 1 egg, lightly beaten
- Optional: dark soy sauce and chopped fresh cilantro
Directions:
- Rinse the spears and break off the tough ends from the fresh asparagus. Cut into 1/2-inch pieces and cook in boiled water until tender, about 2-3 minutes. Drain and rince under cold water and set aside.
- In a saucepan, add the oil over medium-high heat. Add the ginger and cook until fragrant about 30 seconds.
- Add the chicken broth, asparagus, crabmeat, and soy sauce. Bring to boil over high heat.
- Add the egg , stirring constantly over high heat to form egg flowers.
- Add the pepper and sprinkle with scallions.
- Garnish with cilantro and dark soy sauce.

Crab is my favorite shellfish. It is such a treat and I don’t get to have it often. I know I would enjoy this soup on a cold winter day or when asparagus is in season.
When I first saw the title, I was expecting a creamy soup (i.e. pureed asparagus) but what a pleasant surprise, I bet the soy sauce is a nice touch too!
